Grilled Lemon Butter Scallops

A quick, easy and light dinner with only 5 ingredients? Yes please! These Grilled Lemon Butter Scallops are delicious, fool proof and easy to make!

Ingredients

  • 12 oz scallops
  • 1 tablespoon olive oil
  • 1 teaspoon old bay or cajun seasoning
  • 2 tablespoons butter regular or dairy free
  • 1 teaspoons jarred minced garlic

Instructions

  • Pat scallops dry and place in shallow dish
  • Drizzle with oil and seasoning to coat well
  • Soften butter and mix with garlic
  • Set aside in fridge for later
  • Preheat grill to medium high heat (around 375 degrees F) and also preheat a small cast iron skillet on the grill
  • Place scallops directly on grill
  • Cook 2-3 minutes on each side
  • Add butter to skillet and let melt
  • Add scallops and cook 1 minute or so on each side to sear with butter

Notes

  • Overcooked scallops will be rubbery, cook just until opaque
  • Can be made inside on a grill pan
