Grilled Lemon Butter Scallops

- 12 oz scallops
- 1 tablespoon olive oil
- 1 teaspoon old bay or cajun seasoning
- 2 tablespoons butter regular or dairy free
- 1 teaspoons jarred minced garlic
Pat scallops dry and place in shallow dish
Drizzle with oil and seasoning to coat well
Soften butter and mix with garlic
Set aside in fridge for later
Preheat grill to medium high heat (around 375 degrees F) and also preheat a small cast iron skillet on the grill
Place scallops directly on grill
Cook 2-3 minutes on each side
Add butter to skillet and let melt
Add scallops and cook 1 minute or so on each side to sear with butter
- Overcooked scallops will be rubbery, cook just until opaque
- Can be made inside on a grill pan
