Grilled Chipotle Chicken Tacos

Only 4 ingredient needed to make the ultimate grilled chicken tacos! The chipotle flavor takes it up a notch and using chicken thighs will result in the most flavor and juicy chicken tacos of your life!

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons homemade taco seasoning
  • 2 tablespoons sauce from canned chipotle peppers in adobo
  • 1 tablespoon avocado oil
  • Crispy corn tortillas lettuce, avocado and cilantro lime ranch as desired

Instructions

  • Preheat grill to about 400 degrees F
  • Mix together seasoning, adobo sauce and oil and pour over chicken
  • Let rest for 10-15 minutes
  • Place chicken on grill and cook for about 5-8 minutes on each side until cooked through to 165 degrees F
  • Remove and let rest 10 minutes
  • Chop chicken and serve on tortillas or as desired

Notes

  • Let chicken rest for at least 10 minutes before chopping so that it will remain juicy
  • Be sure not to overcook, use a meat thermometer
