Pumpkin Chili
Chili doesn't need to be a boring meal! This Pumpkin Chili can be simmered on the grill or the stove for the perfect fall flavored meal! Use your homemade chili seasoning to make this simple meal in no time.

1 tablespoon olive oil 1 pound ground turkey 1/2 cup finely diced carrots 1 teaspoon jarred minced garlic 1/2 cup diced onion 2 tablespoons chili seasoning 1/2 teaspoon chipotle chili powder 28 oz crushed tomatoes 1 cup canned pumpkin 12 oz cubed butternut squash 1 1/2 cups chicken broth
Preheat grill to 400 degrees
Using large dutch oven heat oil and then add ground turkey, breaking apart and browning
Once meat is about halfway cooked add carrot, garlic and onion and saute for 2-3 minutes
Add seasonings and stir into meat
Add tomatoes, pumpkin, butternut squash and broth
Simmer for 20 minutes or until veggies are softened, stirring occasionally
Make on stove top over medium high heat, if desired
Reduce or omit chipotle chili powder, if desired
Use pure canned pumpkin and not pumpkin pie filling
Save time by using pre-cubed butternut squash at the grocery store
Substitute ground beef or bison for turkey. if desired
