Gluten Free Turkey Meatloaf

Ingredients

  • 2 pounds ground turkey
  • 1/4 cup gluten free panko breadcrumbs
  • 1/4 cup milk regular or dairy free*
  • 1/2 teaspoon salt
  • 1/2 teaspoon herb and garlic seasoning
  • 1 egg
  • 3 tablespoons BBQ sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar

Instructions

  • Mix together breadcrumbs and milk and set aside to soak for 5-10 minutes until milk is fully absorbed
  • Mix together BBQ sauce, tomato paste and sugar and set aside for later
  • Mix together with all remaining ingredients by hand with the soaked breadcrumbs until well combined
  • Coat 5 inch cast iron skillet well with oil
  • Place meat mixture evenly in skillet
  • Place on grill preheated to 350 degrees
  • Top with BBQ sauce after about 30 minutes of cooking time
  • Cook until meatloaf reaches internal temp of 165 degrees F (about 45 minutes total)

Notes

  • Optional:  bake in oven at 350 degrees, 45 minutes or until reaches internal temp of 165 degrees F
  • Meal Prep:  wrap tightly in plastic wrap, refrigerate up to 3 days or freeze up to 3 month. Thaw before cooking.
  • If using gluten free panko breadcrumbs, use half the amount. If using regular panko breadcrumbs, use 1/2 cup panko and 1/2 cup milk
  • Any dairy or unsweetened unflavored non dairy milk will work
  • Ensure BBQ sauce, seasoning, and other ingredients are gluten and/or dairy free
