Gluten Free Turkey Meatloaf

2 pounds ground turkey 1/4 cup gluten free panko breadcrumbs 1/4 cup milk regular or dairy free* 1/2 teaspoon salt 1/2 teaspoon herb and garlic seasoning 1 egg 3 tablespoons BBQ sauce 1 tablespoon tomato paste 1 tablespoon brown sugar
Mix together breadcrumbs and milk and set aside to soak for 5-10 minutes until milk is fully absorbed
Mix together BBQ sauce, tomato paste and sugar and set aside for later
Mix together with all remaining ingredients by hand with the soaked breadcrumbs until well combined
Coat 5 inch cast iron skillet well with oil
Place meat mixture evenly in skillet
Place on grill preheated to 350 degrees
Top with BBQ sauce after about 30 minutes of cooking time
Cook until meatloaf reaches internal temp of 165 degrees F (about 45 minutes total)
Optional: bake in oven at 350 degrees, 45 minutes or until reaches internal temp of 165 degrees F
Meal Prep: wrap tightly in plastic wrap, refrigerate up to 3 days or freeze up to 3 month. Thaw before cooking.
If using gluten free panko breadcrumbs, use half the amount. If using regular panko breadcrumbs, use 1/2 cup panko and 1/2 cup milk
Any dairy or unsweetened unflavored non dairy milk will work
Ensure BBQ sauce, seasoning, and other ingredients are gluten and/or dairy free
