Cajun Chicken Sandwich

My homemade cajun seasoning blend makes these Grilled Cajun Chicken Sandwiches the best! Tender, juicy and seared on the grill for best flavor!

Ingredients

  • 24 oz boneness skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon cajun seasoning blend

Instructions

  • Preheat grill to around 400 degrees
  • Toss chicken with olive oil and seasoning until well coated
  • Place on grill and cook for 6-8 minutes then flip and cook for an additional 6-8 minutes or until cooked through to an internal temperature of 165 degrees F
  • Serve chicken on buns with mayo, lettuce, tomato and onion or as desired

Notes

  • ensure chicken breasts are similar size and thickness for even cooking
  • ideal size for chicken sandwiches is about 8 oz per breast - mine were 16oz so I cut them in half
  • feel free to sub homemade seasoning for store bought
  • leftovers can be stored unassembled in fridge for up to 3 days
