1/4 cup gluten free panko breadcrumbs 1/4 cup milk dairy free 1 pound ground beef 1 pound ground pork 1 egg 2 oz finely diced carrot 3 oz finely diced zucchini 1 tablespoon herb and garlic seasoning
Mix together breadcrumbs and milk and set aside to soak for 5-10 minutes until milk is fully absorbed
Mix together with all remaining ingredients by hand until well combined
Coat 5 inch? Cast iron skillet well with oil
Place meat mixture evenly in skillet
Place on grill preheated to 350 degrees
Cook until meatloaf reaches internal temp of 160 degrees F (about 1 hour)
