Ingredients

  • 1/4 cup gluten free panko breadcrumbs
  • 1/4 cup milk dairy free
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 egg
  • 2 oz finely diced carrot
  • 3 oz finely diced zucchini
  • 1 tablespoon herb and garlic seasoning

Instructions

  • Mix together breadcrumbs and milk and set aside to soak for 5-10 minutes until milk is fully absorbed
  • Mix together with all remaining ingredients by hand until well combined
  • Coat 5 inch? Cast iron skillet well with oil
  • Place meat mixture evenly in skillet
  • Place on grill preheated to 350 degrees
  • Cook until meatloaf reaches internal temp of 160 degrees F (about 1 hour)

Notes

  • Use gluten free panko breadcrumbs for best results
  • Check seasoning blend to ensure no gluten
