Grilled Carrots

The best side dish to make on the grill? It may just be Grilled Carrots! Especially if they have a honey butter and fresh herb glaze!

Ingredients

  • 1 1/2 pounds carrots
  • 2 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 2 tablespoons butter dairy-free
  • 2 teaspoons chopped fresh dill or thyme
  • 1 tablespoon honey

Instructions

  • Peel and slice carrots diagonally into 2 inch pieces
  • Toss with 1 tablespoon olive oil plus salt and pepper
  • Place on preheated (350 degree F) grill
  • Cook for about 20 minutes or until tender, turning often
  • Preheat a cast iron skillet on the grill while cooking carrots
  • Once carrots are ready, melt butter and remaining olive oil in skillet
  • Add fresh herbs and saute for 2-3 minutes
  • Add carrots and honey and continue to saute, stirring often for 4-5 additional minutes

Notes

  • Regular butter can be substituted for dairy-free
  • Cook carrots to your desired tenderness
