Grilled Carrots
The best side dish to make on the grill? It may just be Grilled Carrots! Especially if they have a honey butter and fresh herb glaze!

- 1 1/2 pounds carrots
- 2 tablespoon olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon pepper
- 2 tablespoons butter dairy-free
- 2 teaspoons chopped fresh dill or thyme
- 1 tablespoon honey
Peel and slice carrots diagonally into 2 inch pieces
Toss with 1 tablespoon olive oil plus salt and pepper
Place on preheated (350 degree F) grill
Cook for about 20 minutes or until tender, turning often
Preheat a cast iron skillet on the grill while cooking carrots
Once carrots are ready, melt butter and remaining olive oil in skillet
Add fresh herbs and saute for 2-3 minutes
Add carrots and honey and continue to saute, stirring often for 4-5 additional minutes
- Regular butter can be substituted for dairy-free
- Cook carrots to your desired tenderness
