Grilled Potato Wedges

Need another option for a tasty side dish to serve up with your dinner? Who doesn't! These Grilled Potato Wedges are simple, tasty and go with everything! Delicious dipped in Chipotle Lime Aioli!

Ingredients

  • 1 pound russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt

Instructions

  • Preheat grill to 400 degrees F
  • Scrub potatoes clean and pat to dry
  • Cut into 1/4 inch thick wedges lengthwise
  • Microwave for 3-4 minutes until slightly softened
  • Toss with oil and seasonings
  • Place directly on grill grate or on a veggie grill pan
  • Cook for about 5-7 minutes on each side until slightly crispy and browned
  • Serve with Chipotle Lime Aioli or as desired

Notes

  • precook potatoes in microwave to ensure they cook better once on the grill
  • reheat leftovers in oven or air fryer so they don't get soggy
  • russet potatoes work best
