My go-to for healthy and easy meal prep! This Greek Chicken Salad is quick and easy to make and perfect for a family meal or for lunches all week!

  • 6 cups chopped romaine lettuce
  • 1 cup grape tomatoes sliced
  • 1/2 English cucumber quartered
  • 1/2 cup kalamata olives
  • 1 pound leftover greek chicken kabobs
  • 1 avocado cut into chunks
  • 1/2 cup sliced red onion


  • Add all ingredients to bowl and toss
  • Serve with dressing of choice
