Carrots one of the healthiest vegetables around. In fact, they are considered a superfood due to the amount of vitamins, minerals, and cancer-fighting agents found in them.
Carrots contain compounds that keep your eyes healthy. That’s a well known fact. But, did you know that carrots promote healthy sleep because of the amounts of potassium and Vitamin B6 in them?
Grilling carrots brings out their fresh and sweet flavors. Cooking carrots in some way also makes them healthier. The beta-carotene contained in them gets released in the cooking process and becomes more readily available for digestion.

Ingredients You’ll Need To Make Grilled Carrots:
- carrots
- olive oil
- kosher salt
- pepper
- butter (dairy-free)
- chopped fresh thyme (or dill?)
- honey
How To Make Carrots on the Grill…
- Peel and slice carrots diagonally into 2 inch pieces
- Toss with 1 tablespoon olive oil plus salt and pepper
- Place on preheated (350 degree F) grill
- Cook for about 20 minutes or until tender, turning often
- Preheat a cast iron skillet on the grill while cooking carrots
- Once carrots are ready, melt butter and remaining olive oil in skillet
- Add fresh herbs and saute for 2-3 minutes Add carrots and honey and continue to saute, stirring often for 4-5 additional minutes
Pro Tips…
This recipe works best with fresh peeled carrots rather than baby carrots.
Turn carrots often to ensure they don’t burn.
Depending on your preference, you can cook carrots to a softer consistency or leave them crispier.
If no one in your family has dietary restrictions, you can substitute regular butter.
