A simple all in one meal! These simple grill Pork Kebabs are quick to put together and turn out juicy and flavorful!
Kebabs make a great weeknight meal or even a meal for entertaining guests! With all the meat and veggies on one stick, they are perfect for handing out to a crowd or grabbing for a quick and healthy meal.
Ingredients needed:
- pork tenderloin – these usually come in a two pack so simply freeze the other for later, or make a double batch if serving a crowd
- veggies – I love a mix of bell peppers, preferably orange or yellow, and red onion
- pineapple – goes perfectly with pork
- marinade – mix together chili powder, cumin and salt with avocado oil to brush over skewers
How to make pork kebabs:
- cut everything into large bite sized pieces making sure they are big enough they won’t fall off the skewers
- if using wooden skewers, soak in water for at least 15 minutes
- Alternate ingredients as you place them on skewers
- Place on preheated grill and turn at least once until everything is cooked through
Marinade flavor
I used a simple mix of cumin, chili powder, salt and avocado oil.
You can mix this up with any flavors or seasoning blends you like
Be sure to mix with a little oil to help brown up and cook the veggies and pork and keep them juicy.
More tips
- be careful not to overcook – it’s best if veggies are still a bit crisp and pork is not overdone
- use a thermometer to check the internal temp of the pork (it’s done at 165 degrees F)
- store leftovers in airtight container in fridge up to 3 days
- leftovers of this recipe will not freeze well
Pork Kebabs
Ingredients
- 1 pound pork tenderloin
- 1 orange bell pepper
- 1/2 red onion
- 8 oz cubed pineapple
- 2 tablespoon avocado oil
- 2 teaspoon chili powder
- 2 teaspoon cumin
- 1 teaspoon salt
Instructions
- Cut pork into 1 inch cubes
- Cut pepper and onion into large chunks
- Thread pork, pepper onion and pineapple onto skewers
- Mix together remaining ingredients and brush over skewers
- Preheat grill to 400 degrees
- Cook skewers for 10-12 minutes until pork reaches internal temp of 145 degrees F
Notes
- buy already cubed pineapple in the produce department for quick prep work
- watch carefully to be sure you don’t overcook
