My homemade cajun seasoning blend makes these Grilled Cajun Chicken Sandwiches the best! Tender, juicy and seared on the grill for best flavor!
When you want something other than boring cold cuts for your sandwich, grill up these tasty chicken breasts instead! So much better than anything you’d get at a fast food drive thru and so much healthier!
By making your own seasoning blend you can control the ingredients, and the optional gluten-free bun makes this a recipe for many to enjoy.
Ingredients you’ll need
- boneless skinless chicken breasts (preferably organic)
- homemade cajun seasoning blend
- lettuce
- tomato
- onion
- mayo
- gluten-free buns
How to Grill Chicken Breasts
If desired, you can always brine your chicken breasts first to ensure they stay juicy. However, I rarely plan that far ahead, so this is a quick method for grilling up some tasty chicken!
- Toss chicken with olive oil and seasoning and let sit in bowl to sort of quick marinate while you prepare other ingredients and heat the grill
- Ensure you shake off any excess oil from the chicken before putting it on the grill so that the oil does not cause a flare up.
- Grill the chicken at a medium to medium high heat. I prefer cooking them on my Traeger over a longer time, but you can cook them on a regular gas grill as well.
- You want to keep the temp so that the chicken will have time to cook through without burning the outsides
A few more tips
- ensure chicken breasts are similar size and thickness for even cooking
- ideal size for chicken sandwiches is about 8 oz per breast – mine were 16oz so I cut them in half
- feel free to sub homemade seasoning for store bought

Cajun Chicken Sandwich
Ingredients
- 24 oz boneness skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon cajun seasoning blend
Instructions
- Preheat grill to around 400 degrees
- Toss chicken with olive oil and seasoning until well coated
- Place on grill and cook for 6-8 minutes then flip and cook for an additional 6-8 minutes or until cooked through to an internal temperature of 165 degrees F
- Serve chicken on buns with mayo, lettuce, tomato and onion or as desired
